On one side, a smaller cylinder is welded or bolted on that also has a door. The most common style is a barrel, laid on its side and cut in half to make the cooking chamber. Reverse Flow vs Offset Smoker – How They Are DifferentĪt a glance, both of these designs look pretty much the same. We are going to take a look at two designs in this article that are similar but not the same – offset smokers and reverse-flow smokers. Charcoal smokers come in all shapes and sizes and each design has advantages and disadvantages. The meat takes on a unique smokiness and you can mix and match different types of hardwood and fruit wood to develop nuanced flavor profiles that are impossible with an electric smoker or a pellet smoker. You can order yours with tuning plates or reverse flow. There really isn't anything that compares to the flavor of smoking meat on a charcoal smoker. You can get one built 24x48 with two lids. We designed this model with using 3/16 plate to lighten it just enough for using the mower wheels. You will be suprised how little coal and wood this pit uses. The temperature on the outside of the pit stays cool enough to use fancy automotive paints of different colors. ![]() Instead of the firebox being restrictive to the cook chamber its built as open as possible to most efficiently transfer the heat to the meat. Matt's Performance pit is designed with a different concept in mind. For stocked items will have all 4 steel wheels generally because that's most popular.įor a visual tour of each smoker click on the YouTube links under each model.įor instructional videos please go to our Purchase, Warranty, Care, and Use Page See our wheels page for custom options and information about wheels. You can order your smoker with wheels, casters, or combination. We do accept orders for these with 1/4 thick fireboxes if you are looking to save a little money. The drawback to an insulated firebox is the design doesn't lend itself to allowing a grilling lid on top. With purchasing an insulated firebox you can order our performance finishing service including welded corner seam polishing and high end automotive paint. The insulated firebox is a great option for large backyard and trailer pits to maximize your investment. Insulated fireboxes reduce wood consumption, burn cleaner, and require less paint maintenance than a plate firebox. ![]() On our insulated fireboxes we use 3/8 plate on the inside, a 1" layer of ceramic 2400 degree insulation in between, and a 3/16 decorative layer as a cover. We build 2" thick all insulated fireboxes on 24" diameter smokers and up. Square fireboxes have more head space between the flame and the top of the firebox and mechanically enable us to install heat shield insulators on the top to provide better heat transfer to the main cook chamber while reducing wood consumption and paint maintenance. You can load more wood in a square firebox at a time and let it cook while you mow the lawn or spend more time with your family. Although round fireboxes work just fine, square fireboxes are a major benefit to a cook over round. We use square shaped 3/8 plate fireboxes on our premium line with an insulating heat deflector top to hold the heat in the unit and give you less paint maintenance. We build our smokers with thicker fireboxes than you will see at the stores. Our premium smokers come with thicker fireboxes standard and many more features than other builders. Reverse flow system is easier for beginner cooks. We build smokers as reverse flow or traditional flow. Order your pit with adapters for electronic temperature control and fan stokers. I prefer this system because I have a business to run and can't tend to my smoker every minute. The reverse flow system also balances out temperatures right to left so you don't have a hot side and cold side in your pit. The reverse flow system reduces temperature fluctuation by buffering out the fuel consumption rate making an ideal cooking situation for a busy backyard cook. When using large diameter logs I can load up the large square firebox and not add wood for 6 hours or so. We all have other things to do than babysit a smoker. I designed this large firebox so we can watch the game instead of tending a fire all day. You can order yours as traditional flow or reverse flow offset smoker. Our premium offset smokers are designed to give you the best cooking experience possible.
